Recipe 1:

Brisket

PREP TIME:
15 minutes
REST TIME:
10 hours total
COOK TIME:
12-14 hours
SERVING:
12-14 people
INGREDIENTS:

  • Brisket Rub
  • 1 Whole Brisket Approx 6kg

METHOD:

  • 1. Cover the brisket in the rub all over. Rest overnight in the fridge in a deep tray.
  • 2. Remove brisket from fridge 1 hour before cooking, rest at room temperature.
  • 3. Place brisket onto the middle of the rack with fattest end towards heat source at 120̊C pit temperature.
  • 4. Maintain 120̊C temperature throughout cook, avoiding temperature changes of more than 2̊-3̊.
  • 5. Check internal temperature after 8 hours.
  • 6. Cook for another 4 – 6 hours, until brisket has reach internal temperature of 75̊C.
  • 7. A dark outer bark should have formed.
  • 8. Once temperature reached, remove brisket from pit and rest uncovered for 1 hour minimum. Internal temperature will rise to serving temperature of 82̊C.
  • 9. Slice the brisket across the grain in preferred thickness and serve.

Recipe 2:

Chicken Wings

PREP TIME:
15 minutes
REST TIME:
8 hours and 15 minutes total
COOK TIME:
1.5 hours
SERVING:
6-8 people
INGREDIENTS:

  • Chicken Rub
  • 24 Chicken Wings

METHOD:

  • 1. Put the chicken rub and wings into a zip lock bag and shake well to coat the wings. Rest overnight in the fridge in the bag.
  • 2. Remove bag of wings from fridge 30 minutues before cooking, rest at room temperature.
  • 3. Place wings onto the middle of the rack at 120̊C pit temperature.
  • 4. Check wings after 1 hour of cooking by pressing on meat. Once cooked should not spring back.
  • 5. Cook for a further 30 minutes.
  • 6. Internal temperature for chicken should be 75̊C.
  • 7. Once cooked through, remove from pit and rest for 10 minutes then serve.

Recipe 3:

Pulled Pork

PREP TIME:
15 minutes
REST TIME:
45 minutes total
COOK TIME:
5.5-6 hours
SERVING:
10-12 people
INGREDIENTS:

  • Pork Rub
  • 1 Pork Shoulder Approx 3kg
  • Glaze – 180g Dijon Mustard, 750ml cider vinegar, 1 tbsp sea salt, 3 tsp cracked pepper & 1 tbsp raw sugar

METHOD:

  • 1. Pat the pork rub onto all sides of the pork shoulder using your fingers. Rest for 45 minutes uncovered at room temperature.
  • 2. Place pork onto the middle of the rack at 135̊C pit temperature.
  • 3. Leave for 3 hours.
  • 4. In the meantime, make the glaze by whisking all ingredients together.
  • 5. After 3 hours, quickly brush or mop a thin layer of the glaze evenly all over the pork. Check the internal temperature.
  • 6. Cook for another 2 – 3 hours, until pork has reach internal temperature of 91̊C.
  • 7. When up to temperature, pork should have a rich dark brown outer.
  • 8. No rest time required – using forks or meat claws, pull the pork apart while it’s still hot.
  • 9. Use the remaining glaze to pour over the pulled pork and serve.

Recipe 4:

Smoked Potato Skins

PREP TIME:
10 minutes
COOK TIME:
50 minutes
SERVING:
8-10 people
INGREDIENTS:

  • 8 large potatoes
  • 1 cup grated cheese
  • 1/2 cup spring onions
  • 1 tsp smoked paprika powder
  • 1 tsp cayenne powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbs olive oil
  • Sour cream to serve

METHOD:

  • 1. Wash potatoes and bake in oven until tender.
  • 2. Meanwhile, mix all dry ingredients together in a small bowl and finely slice the spring onions.
  • 3. Once tender, allow the potatoes to cool slightly, cut lengthwise into quarters.
  • 4. Using a spoon, scoop out the potato leaving a thin layer of potato and skin shells intact.
  • 5. Brush with olive oil inside and out and coat both sides with the mix of dry ingredients rub.
  • 6. Place potato skins onto the middle of the rack at 120̊C pit temperature.
  • 7. Smoke for 20 to 40 minutes until crispy.
  • 8. Sprinkle grated cheese into shells and smoke again until cheese melts.
  • 9. Sprinkle over the sliced spring onions and spoon a dollop of sour cream onto each shell.
  • 10. Serve hot with extra sour cream.
