Below is a diagram of a correct steeling technique. Too much is made out about the difficulty of steeling a knife the key is practice and persistence.

Correct use of the sharpening steel: To sharpen the knife, draw the cutting edge several times alternately from the left and right along the entire length of the sharpening steel, ensuring the same number of strokes on both sides. Move the edge along the sharpening steel at an angle of 15 – 20°.

    I bought this steel from My Slice of Life after reading several people praise it in various knife forums. All I can say is WOW! Praise is well deserved, it brought all our kitchen knives back to razor sharp effortlessly. One had never been sharpened in 9 years from new (bad I know). They are way sharper now than I was ever able to get with our old brand name steel and took less than 15 seconds a blade. This steel and probably a very occasional hit on the grinder to knock the bevel back on thicker blades is all I will ever need.
