What can be preserved?:
You can preserve most fruits including apples, apricots, berries, tomatoes, cherries, citrus fruits, grapes, mangos, passionfruit, peaches, pears, pineapple, plums, quinces or a combination. Vegetables such as onions, capsicum, broccoli, mushrooms, zucchini, squash and chilli can be pickled alone or combined to make a great antipasto.

Instructions & Methodology:
The boiling water bath method (also known as ‘water bathing’ or ‘hot water bathing’) is where you fill clean jars with high acid contents (such as tomato relish, pickled zucchini, strawberry jam), seal with a preserving lid, and submerge under hot water, then bring to temperature for a required amount of time. This time depends on the contents inside the jars, and the size of the jars.
The ‘high acid’ contents means an environment in which many microorganisms which spoil food or make it unsafe, are unable to survive. Heat destroys any food spoiling/ foodborne illness microbes which may be present. The processing also forces oxygen from the jars, creating a vacuum (anaerobic) environment, which inhibits survival or growth. Then as the jars cool after being removed from the water, a vacuum seal is created, which prevents recontamination and air entry.

Step 1. Place preserving rings on Fowlers Preserving Jars.
Step 2. Pack fruit into jars and add liquid.
Step 3. With packing stick, remove any air pockets and position fruit. Fill liquid 12mm from top.
Step 4. Place lids on jars and fit clips.
Step 5. Place sealed jars in Fowlers Vacola Simple Natural Preserver or a Large Stockpot. Fill preserver/stockpot with cold water.

Step 6: Switch unit on and set kitchen timer to required time (usually 60-90 minutes) or if using a pot, boil water to 100 degrees for the desired amount of time
Step 7: As soon as time is up, remove jars using tongs.

Step 8: Cool for 12-18 hours with clips left on.
Step 9: Remove clips, wipe jars clean and label.
