The type of pepper to use is all about the desired flavour and texture in the dish. Peppercorns are full of many flavor compounds, piperine being the one that gives the heat. Whole peppercorns release less of these compounds, giving a more subtle and less spicy flavour. Freshly cracked and ground peppercorns release these much more fully and quickly into the food, giving much more “pop” with the aromatic compounds and more heat.
