I.O.Shen handles are heavier and have the weight of a traditional German knife with the added benefit of Japanese steel which has been honed to a 15 degree angle, which allows for wonderful slicing and portion control. Description:
This utility knife is paired with a slender handle and a tapered blade. A utility knife is an all-purpose knife that is typically larger than a paring knife but smaller than a slicing knife. Usually these knives measure between 12cm and 16cm on the blade. The utility knife can be used to carve, slice, bone and fillet but it is perfect for fine slicing or cubing small quantities of meat or fish or herb and garlic preparation. It may be a small knife but it can tackle the hardest of food stuff!
